Easiest Way to Make Salsa

I bought a Tortilla chips and cheese dip last time. And I want to add another dip for variety. Lucky me, I found this easy to make salsa recipe at food.com. 





Ingredients:

  • large tomatoes
  • head garlic
  • jalapenos

  • Directions:

  • Core the tomatoes.
  • Dig the cloves from the head of garlic.
  • Chop the stem off the jalapeños.
  • Throw the cored tomatoes, the cloves of garlic, and the stemless jalapeños into a pot of water. Bring it to a boil, and turn down to medium/high heat.
  • Turn burner off when tomatoes start to peel, usually in 30-40 minutes on the stove.
  • Drain tomatoes, garlic, and jalapeño and let cool.
  • Throw ingredients into a blender or food processor and pulsate until desired consistency.
  • Add salt if desired.



  • Bacon Rollups Recipe

    Ingredients:

  • 2 (3 ounce) packages cream cheese with chives (softened)
  • tablespoon milk or tablespoon mayonnaise
  • 25 slices mixed grain bread (crusts removed & cut in half)
  • 25 slices bacon (cut in half)
  • parsley sprig (optional)

  • Directions:

    1. Combine cream cheese and milk (or mayonnaise) stirring until of spreading consistency.
      Spread 1 teaspoon of cheese mixture on each halved bread slice.
      Roll tightly from the smallest end.
      Wrap with bacon and secure with toothpick.
      Place on broiler pan.
      Bake at 350 degrees Fahrenheit for 30 minutes.
      Turn if necessary.
      Garnish with parsley if desired.

      Note: These may be assembled ahead of time and frozen before cooking. To serve, remove frozen rollups from freezer and allow to thaw in the refrigerator over night. Then bake at 350 degrees Fahrenheit for 30 to 40 minutes.

    My First Try to Cook Katsu

    Its a fail!

    Not really. It tasted good actually.

    What went wrong was instead of using flour, I used cornstarch because we've ran out of stock. So just imagine how it looks like. You can really see the white because it was so visible. The breadcrumbs were brown already and the fillet was not done yet.

    But nevertheless, my kiddo still loved it. I also made a sweet dip for it.

    I will try again next time. I'm sorry, there's no photo of it. haha!

    Oh My la Senza

    This was my surprise gift from hubby. 

    I was rushing to be at Active Play last Saturday because I was out with my Kumare for a date. And the family will be having a Christmas dinner at that time. I'm glad I was able to make it before the said dinner. So when I was in the play house already, my SIL handed me the paper bag and told me it was from her Kuya. Wow, so I said thank you. Prior to that, on my way to the venue, I was thinking if hubby ever thought of any surprise for me and for her little girl. But I dismissed the thought, expecting and getting disappointed is kinda painful. haha!

    I never dared ask hubby if its his idea. Or my MIL or SIL's idea, buying these:




    But nevertheless, I love it! And the size is just right! hahaha! I've been wanting to buy a piece from la Senza for ages, but because its too pricey, I wasn't able to! Now, its like a dream come true already!

    The feeling of being surprised?

    A sheer bliss!

    Chicken Katsu Recipe

    Remember my post about the newly opened Japanese Restaurant named Yabu: The House of Katsu at SM Megamall? Well, I found a recipe about their famous japanese katsu just now. It is so simple and affordable. I might as well include it for New Year's eve.


    Ingredients:


    • 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
    • salt and pepper to taste
    • 2 tablespoons all-purpose flour
    • 1 egg, beaten
    • 1 cup panko bread crumbs
    • 1 cup oil for frying, or as needed

    Directions:

    Season the chicken breasts on both sides with salt and pepper. Place the flour, egg and panko crumbs into separate shallow dishes. Coat the chicken breasts in flour, shaking off any excess. Dip them into the egg, and then press into the panko crumbs until well coated on both sides.

    Heat 1/4 inch of oil in a large skillet over medium-high heat. Place chicken in the hot oil, and cook 3 or 4 minutes per side, or until golden brown.

    Pasta Arrabiata Recipe

    I was browsing earlier for easy and affordable recipes to prepare on new year's eve. The last time I dined at Italianni's with a friend we ordered something similar to pasta arrabiata, I am not so sure whether its pasta arrabiata or arrabiato. But sheeessshh, the dish was so delish. You should try it too!

    Anyhoo, here's the recipe I found at myrecipes.com.

    Ingredients:


    • 4 teaspoons minced garlic (about 5 cloves)
    • 1/4 cup olive oil
    • (28-ounce) can petite diced tomatoes, undrained
    • (29-ounce) can tomato puree
    • 2 teaspoons crushed red pepper flakes
    • 1 teaspoon sugar
    • 1/2 teaspoon dried oregano
    • 1/4 teaspoon salt
    • 1 teaspoon lemon juice
    • (16-ounce) box penne pasta
    • 1/2 cup freshly shredded Parmigiano-Reggiano cheese blend*
    • 1/4 cup thinly sliced fresh basil
    • Garnishes: Parmigiano-Reggiano cheese shavings, fresh basil sprigs
    Directions:

    1. Sauté garlic in hot oil in a 6-quart saucepan over medium heat 1 minute. Add tomatoes and tomato puree. Bring to a boil; reduce heat to low. Stir in red pepper flakes and next 4 ingredients; cook, stirring occasionally, 20 minutes.
    2. Prepare pasta in a large Dutch oven according to package directions. Drain, reserving 1/2 cup cooking liquid. Return pasta and reserved cooking liquid to Dutch oven, and sprinkle with shredded cheese.
    3. Stir basil into tomato sauce, and pour 3 cups sauce over pasta. Toss to coat. Serve with remaining sauce. Garnish, if desired.
    4. *1/2 cup freshly grated Parmesan cheese may be substituted.
